MINTED SIMPLE SYRUP
1 cup water
1-1/2 cups white sugar
1/2 cup packed fresh mint leaves
Boil water. Add sugar and stir until thoroughly dissolved. Add mint leaves, and set aside to cool overnight (up to 12 hours), stirring occasionally. Strain syrup through a fine sieve, discarding mint. Makes 1 cup syrup or enough for 5-6 mint juleps.
MINT-INFUSED LIMEADE
20 mint leaves
Ice
1 cup lime juice (pre-squeezed)
1-1/2 cups simple syrup
4 cups club soda or seltzer water
mint sprigs or lime slices (for garnish)
Place mint leaves in glass pitcher. Then, bruise gently with the bottom of a sturdy ladle or end of a dowl-style rolling pin. Fill pitcher with ice, then add lime juice, simple syrup and club soda. Serve over ice with garnish of mint sprig or lime slices. Serves 6.
*Mojito fans might want to add a little rum to the mix for a lighter take on the popular Cuban cocktail
