Well, today is my day off so I had to escape from my Aunt's house LOL! I decided to cook dinner for Victor tonight, I know most of you won't find this a big deal but I haven't cooked dinner in probably 2 years! I am not a very cook, although Victor says that I have never made anything he wouldn't eat. When we were young my mother never let us in the kitchen while she was cooking, and I really didn't have much of an interest anyway. If I ever won the lottery the first thing I would do is hire a personal chef! I figured I would start with something easy for tonight, Blueberry pork roast from my "The everything slow cooker cookbook" oh yes I have many, many cook books but that still didn't motivate me to cook.

 

Blueberry pork roast:

3 pound pork loin

1 teaspoon of grated orange peel

2 cups fresh blueberries

1/2 cup white grape juice

1/2 cup of sugar

1 teaspoon of salt

Place the pork loin in the slow cooker. Grate the orange peel using a vegetable grater. Wash the blueberries and remove the stems. Combine the grape juice, sugar, orange peel, blueberries, and salt; pour mixture over the prok loin. Cover and cook on low for 7-8 hours.

Cooking time: 7-8 hours

Preparation time: 20 minutes

Attention: minimal

Pot size: 3 - 6 quarts

Serves 6

 

I hope he likes it! I also bought stuff to make a salad, and some carrots, and fresh bread. I so am not the cook so that was all I could think of. Although, it would have been the same money to go out and eat (the pork loin was $20.00!) he wanted a home cooked meal. He has no idea what I am making, told me to make whatever I wanted. I think I am going to cook dinner on the days that I have off, maybe if I cook more I'll get better at it!

I am suppose to go to see the Sex & The City movie tomorrow night with my Aunt and sister, but I won't get my hopes up until tomorrow as I know Crystal likes to change plans on a moments notice! I guess Victor will have enough for leftovers for dinner tomorrow so that is good. I don't know where Crystal and I are going but it will have to be cheap! When I got to Victor's today I had yet another notice from the court and the lawyer, saying my payment arrangement isn't good enough and I still must attend the court date Undecided and now the bill is $5,800.00 istead of $5,440.00! Oh well, they will soon see that I am barely able to afford the $25.00 a month they get now!  I am so mad at myself, the credit limit on this card was $1,800.00 now it has more trippled with fees and interest! Why was I such a fool to think that my jackass ex-boyfriend was actually going to pay for the stuff he still has! We broke up in March of 2003 and he kept the big screen TV, TV stand, freezer, etc that was on the credit card because it was for him, he just couldn't get a card in his name.  What was I thinking, I should have taken everything when I moved out, at least then I would have what I am being taken to court for!! I caught him cheating on a Saturday night and by Monday morning I had a new place to live, back then all I wanted to do was get out, never mind thinking about taking the TV.  Boy I'll be paying for this for a very long time! Yell

    You will have to let us know how the pork roast comes out! :) I'm not much of a cook either. Ever since being married, I'm learning more. Before, i was a just add water person. LOL. Probably how I got my diabetes. ugh! I'm sorry you are having stress with the court for the credit card. Too bad you didn't take him to court! I've seen those court shows and the guys always says, "it was a gift". yeah, right! Good luck with the court situation. Have a nice dinner tonight! Hugs, carol :)

    well, i pray for justice concerning the credit card and stuff...

    that's the bad thing about broken relationships...bad debt...it really sucks, so i feel for you.....i understand it making you mad, because it would make me feel mad and ripped off too....another thing is i despise cheating....

    the pork roast sounds interesting...let me know if it really sweet.....i love to cook....my mother was an awesome cook, i love to bake and cook....wish i was rich i would cook a little more gourmet.....
