Ok, I'll confess, I'm just really tired. Part of it is post-trial letdown and part is just too many hours working the case. Tonight, going to get to bed early and sleep in (to the extent my yardworkers will let me).
My two day trial got really condensed because of work with the CPA's - got out early and took my staff to our local bar (Firehouse Grill) for snacks and drinks for a real thank you for all the hard work.
Tonight, watching my usual trash TV (Big Brother, Taboo and other tivo'd shows). I know I should watch something spiritually uplifting, but I enjoy my trash.
My yard is having major progress - patio is 2/3 done, retaining wall is 9/l0 done and they have started on the kitchen island (concrete blocks are being set and the base has been poured).
Wow, I am stunned by the progress. Guess my Octoberfest will work out.
I'm tired. After trial, there is always an adrenalin letdown. I'm going to take it really easy tomorrow - it's like a bonanza having a free work day.
Today started out a little cold-Sofia (aka Little Bit) decided she needed to get under my covers and did. Totally sacked out. Turned a lot warmer but was manageable. Found myself wheezing with allergies - on to the inhalers!
Time to crash but here's another recipe - good warm or cold and freezes well.
ARTICHOKE NIBBLES
2 6 oz. jars marinated artichoke hearts
1 small onion, finely chopped
1 clove garlic, minced
4 eggs
l/4 cup fine dry bread crumbs
l/4 teaspoon salt
1/8 teaspoon each pepper, oregano, and Tabasco
1/2 lb sharp cheddar cheese, shredded (2 cups)
2 tablespoons minced parsley
Drain oil from artichokes from 1 jar into fry pan. Set artichokes aside. Drain other jar (discard marinade or use for other purpose). Cut up all artichokes and set aside. Add onion and garlic to pan and sauté for 5 minutes. In bowl, beat eggs with fork; add crumbs, salt, pepper and Tabasco, then stir in cheese, parsley, artichokes and onions. Turn into greased 7" x 11" baking pan and bake 30 min. at 325 degrees or until set when lightly touched. Let cool in pan, cut into 1" squares. Serve cool or reheat at 325 degrees for 10 to 12 minutes.

Sorry you have the psot trial jittrs. I guess it is a letdown like most things that we pump ourselves for. I LOVE artichokes! ((hugs))marcia

Well I am so glad all the trial rigamarole is over for the moment and you can relax. I've lived with construction work being done in my home and I know how it can take on a life of it's own, I'm so glad it's going well. Again, I can't wait to see the finished product.
