Wanted to post a few recipes.  Today I tried this one and liked it very much.  You don't have a problem with gluten in it. Nor do you have additives in it like store bought. Found this on the net.

Soy Sauce Substitute

2 c. low sodium beef broth

2 teaspoons cider vinegar 

1 tsp. dark molasses

1/8 tsp ground ginger

1 dash black pepper

1 dash garlic powder

1 dash onion powder 

Combine all ingredients in a small sauce pan and boil uncovered until reduced to 1/2 cup.  Store in refrigerator.  Stir/shake before using (2-4 servings)

Bisquick is something I started using recently to find quick meals.  However Bisquick has something in it that makes my gut dry and want to gag.  So I got this recipe and it works very well for casseroles as well as dumplings.  Cheaper making your own.

Substitute Bisquick Mix

6 c. Flour

3 tablespoons Baking Powder.

1/2 tsp. salt

2/3 c. canola oil

Place flour in large mixing bowl and sift in Baking Powder. Sprinkle in salt and mix with a large spoon until salt and baking powder is evenly distributed.  Pour in oil, use a hand pastry blender. Continue to blend flour until it looks coarse and grainy.  No lumps should be in the mix.  Use as suggested in recipes calling for bisquick.

This is really good for breakfast but you have to make it the night before.  If you don't like oatmeal because of the sticky and mushy texture, you are sure to like this.  I hat oatmeal but love oatmeal cookies.  This bakes up as a spongy loaf.  My husband likes to top it with maple syrup.

Amish Baked Oatmeal 

3 tab. melted butter

2 large eggs

1 1/2 tsp. baking powder

1 1/2 tsp. vanilla

1 tsp. cinnamon

1/2 tsp.  nutmeg

1/4 tsp. salt

1 c. milk

2 tab. milk

1/2 c. chopped walnuts 

3 c. oatmeal (regular or quick) -not instant

Grease 1 1/2 quart baking dish.  In bowl add eggs and beat well.  Add brown sugar and mix. Add baking powder, vanilla, nutmeg and cinnamon and salt, Mix well with no lumps.  Whisk in butter and both measures of milk.  Stir in chopped walnuts and the oatmea.  Pour into baking pan, cover and let sit overnight.

Next morning Bake, uncovered, at 350 degrees for 355-45 minutes, or until set in the middle.  Serve hot with warm milk poured over.

All I want is recipes to add to my main dishes too.  I found this one and it makes a big batch.  Good as leftover also.  You can buy a bag of frozen succotash to use in this recipe.  It is a mix of corn and lima beans together.  However it is less in amount.

Zucchini Succotash

3 tab. butter or oil

1 tab. minced garlic

1 green bell pepper chopped

1 red bell pepper chopped

1 medium onion chopped

2 c. corn -frozen

2 c. lima beans-frozen

2 c. diced zucchini

Salt Pepper

1 c. water 

In a large pot, heat the oil/butter over medium high heat.  Add bell peppers, onion and garlic and saute until half tender. (about 5 minutes)

Add the corn & lima beans and 1 cup water and pepper. Bring to boil, cover and cook meduim heat for 15 minutes.  Add zucchini and cook for another 5 or until lima beans are soft and zucchini is cooked the way you like.  Salt if you like.  You can add butter to this mix but I like it just as it is.
