Ginger Glazed Grilled Honeydew
Posted on 07/12/08, 10:37 am
I made these in the counter top rotisserie with good results, as I can't use my grill just yet (it's full of yellowjackets!!!). I just cooked them til they were soft and turning brown and basting, just as you would for the grill instructions. They took about 6-7 minutes max.
Prep/Grill time: 25 min
Servings: 6
Ingredients
1/4 cup peach preserves
1 TBS lemon juice
1 TBS chopped candied or crystallized ginger
2 tsp grated lemon peel
1/8 tsp ground cloves
1 medium honeydew, cut into 2-inch cubes
To do:
In a small bowl, combine the first 5 ingredients. Thread honeydew onto 6 metal or soaked wooden skewers. Brush with half of the glaze.
Coat the grill rack with cooking spray before starting grill. Grill honeydew, covered, over medium high heat for 2-3 minutes a side, or just until melon begins to soften and brown, basting frequently with remaining glaze.

GAH! I've tried to enter my reply 3 times now.
<-- Allergic to bees, so I need to have someone else come over to deal with the nests.... ick.
I'm creating a version of this recipe that uses plantains (subbing cinnamon for the clove and orange marmalade for the peach preserves). The only way I know to make them is to deep fry or pan fry and coat with cinnamon sugar. I'm hoping grilling/rotisserie cooking them also brings out their flavour.
Wish me luck! :D
