Recipe wanted and explanations.

I posted this question on another group but then thought there might be more people here that have tried making their own mayonaise.

I am looking on how to make my own mayonaise. I have a recipe and it didn't come out. I am VERY interested in someone posting the results they had making their own mayo. I wonder if the oil I used was the right kind? Canola. I tried using this hand beater that is to whip things and it began getting thick and then just lost it. I read that the more oil you add the thicker it will get. Is there such a problem as too much oil? Recipe called for two cups. Does other oils react differently? I tried this recipe twice and burned out my hand beater. :(

Reason why I need to make my own mayonaise is that I can't tollerate lemon from the store bought. So the recipe that I am trying uses vinegar to its replacement. Basic recipe I have is 1 egg yolk, 1 tab vinegar and 2 cups of oil. Beaten in slowly.

I so need a full proof recipe. Thanks!

    Hi so it only lemon that you are allergic to?

    Yes, all types of citrus gives me gut problems. Stops me up something awful and I don't seem to digest the mayo at all.
