Summer "no heat" recipes

MIXTA (pronounced meex tah') This is a mexican sea food and vegetable dish

Cooked shrimp
Octupus (optional)
Cucumbers
Cilantro
Onion
Lemon juice
Salsa
Corn tortillas or Tortilla chips

Dice cucumbers. Chop up cilantro and onions.....if you chop them together, the cilantro will stick to the onion rather than your knife and cutting board. Mix the onion and cilantro into the diced cucumbers. Mix lemon juice with salsa. If you can find the corn tortillas used for tostadas, place one on the plate....if you are just using tortilla chips you will just put them on around the finished dish. Start with a scoop of the cucumber mixture. Top this with shrimp and/or octopus and pour a little of the lemon juice/salsa over the top. I real yummy and cooling dish.

ANOTHER quick cool snack.....

Cut cucumber into spears and place in a baggie. Squeeze some lemon juice over them and sprinkle with chili powder. Keep in the fridge. Always good to snack on. Low calorie and very flavorful....with no salt.

    Oh yeah....another summer helper is to drink sassafras root tea. It helps thin the blood and helps your body cool itself more effectively in the summer temps.

    "This is my simplest and easiest recipe yet for cucumber salad, my specialty! If you're not a sour cream fan, substituting plain yogurt works great."

    PREP TIME 15 Min
    READY IN 15 Min

    INGREDIENTS
    2 large cucumbers, peeled and cubed
    2 cups sour cream
    4 sprigs fresh mint, chopped
    3 cloves garlic, peeled and minced
    1/4 cup lemon juice
    1/4 cup olive oil
    1/4 teaspoon salt
    1/8 teaspoon ground black pepper

    DIRECTIONS
    Place cucumbers in a large salad bowl, and set aside.
    In a small bowl, whisk together the sour cream, mint, garlic, lemon juice, olive oil, salt, and pepper until well blended. Pour over the cucumbers, and mix until well coated.
