Summer "no heat" recipes

MIXTA (pronounced meex tah') This is a mexican sea food and vegetable dish

Cooked shrimp
Octupus (optional)
Cucumbers
Cilantro
Onion
Lemon juice
Salsa
Corn tortillas or Tortilla chips

Dice cucumbers. Chop up cilantro and onions.....if you chop them together, the cilantro will stick to the onion rather than your knife and cutting board. Mix the onion and cilantro into the diced cucumbers. Mix lemon juice with salsa. If you can find the corn tortillas used for tostadas, place one on the plate....if you are just using tortilla chips you will just put them on around the finished dish. Start with a scoop of the cucumber mixture. Top this with shrimp and/or octopus and pour a little of the lemon juice/salsa over the top. I real yummy and cooling dish.

ANOTHER quick cool snack.....

Cut cucumber into spears and place in a baggie. Squeeze some lemon juice over them and sprinkle with chili powder. Keep in the fridge. Always good to snack on. Low calorie and very flavorful....with no salt.

    This one is from a company called Tastefully Simple that sells different seasoning mixes, but as the TS product here is Vidalia Onion dressing, I expect you could choose either another brand of Vidalia Onion dressing, or your favorite dressing. I served this to my book club last month and they went nuts over it.

    Spinach Salad with Strawberries & Vidalia® Onion Dressing

    Ingredients
    1 pkg. baby spinach leaves
    6 - 8 quartered strawberries
    4 oz. crumbled feta cheese
    1/4 cup Vidalia® Onion Dressing

    Directions
    Combine first 3 ingredients; add Vidalia® Onion Dressing and gently toss. Makes 3-4 servings.

    I just typed out a yummy recipe and then hit enter and nothing happened. When I tried to do it again, I got a blank screen. It's just too fucking hot to sit in here and type it again, AND, the damn dog is lying at my feet and farting. It's midnight and still over 80 degrees, and now it's STINKY in here. I'm going into my bedroom where its cooler and less smelly so it's going to have to wait until tomorrow.

    Don't do heat, or stink very well....can ya tell?

    LOL If we could find a way to harness that gas we could do away with our dependance on foreign oil. I'm pretty sure my dog could power a small city when she's having a "good" day.

    I swear, my dog is little, but she makes mighty stink! I guess it's my own fault for letting her have a little ice cream. Hey, it was hot!

    Anyway, here is the recipe that I tried to post the other night. It was originally intended as an appetizer but I like it for a light meal. This came from my Moms Taste of Home magazine.


    Cucumber Pita Wedges

    1 8oz. pkg cream cheese, softened
    2 T italian salad dressing mix
    4 whole pita breads
    1 to 2 medium cucumbers, peeled and cut into 1/8 inch slices
    Lemon pepper seasoning

    - In large mixing bowl, beat together cream cheese and salad dressing mix until combined.

    - Split pita breads in half, forming two circles. Spread cream cheese mixture over pita circles; cut each into 6 wedges. Top with cucumbers. Sprinkle with lemon pepper. Makes 4 dozen.

    - If you want the cucumbers to be really cool and crunchy, chill them for several hours or even overnight in ice water and then pat dry with paper towels before using.

    Note: last time I made these, I added about a 1/4 cup of chopped olives to the cream cheese mix. Yummy!

    Cucumber Avocado Soup

    SERVES 4

    This soup is so light and fresh that one thing you won't feel after eating it is "fat." But it has the kind of raw fats that your body really needs.

    4 large cucumbers, cleaned and peeled
    4 celery stalks
    1 Hass avocado, peeled and pitted
    1/4 cup chopped dill
    1/4 cup fresh-squeezed lemon juice
    4 cups purified water

    Put all the ingredients in the blender and whir them until creamy smooth. Pour into bowls and serve.

    TIP: Besides being one of the most refreshing things to eat, the cucumber is a diminutive cousin to the watermelon, works as a diuretic and has other cleansing properties.
