Summer Freezing or Canning?

Posted on 07/19/08, 08:08 pm
Has anyone put up food for the winter yet? My daughter in law froze strawberries and made jam awhile back. I have strawberries and jam left so I did not put any up?

    No, I havent yet. My garden has been a disaster the last two years because of drought. Hopefully this year it will be better, though this is the third time we have planted greenbeans. They wont come up, but we arent alone.

    I have alot of tomatoes this year so hopefully can can alot of them and make spaghetti sauce, etc.
    I usually freeze the corn.

    I usually go up and pick blueberries at the blueberry farm up the road but didnt get to this year either. Too busy doing nothing it seems, lol
    or more babysitting.

    I like that strawberry freezer jam, is that what you make.
    I cant eat acids and we dont need the sugar so I stick to just buying sugar free jellies from the Amish or OTC.

    I've already pickled a bunch of cucumbers. I probably will be doing that again this evening. We've picked a bunch of those, but no one else we've talked to has had any yet. I have a bunch of tomatoes growing so I'm waiting for them to ripen. I have 3 plants & they are heavy with tomatoes. They're like huge mutated tomatoe plants or something! LOL! We have had alot of rain this year. That's all I planted plus some jalepenos this year. Next year, I'm going to try green beans.

    Could you share your pickling recipe with us for cukes? Mine have started to grow faster than I can eat them! Are you talking about kirby's or regular cukes?

    I just use those mix packages & follow the directions. You can eat them the next day & they're really good! :}

    I canned some salsa last week. I also canned some grape jelly. It turned out pretty good! I just used premade grape juice because it's cheaper that way. I'm going to have to do more pickles & tomatoes soon. Does anyone have a good spaghetti sauce recipe?
