Afternoon all,

I was wondering if you folks could post some suggestions for healthy lunches that I could make for work.

Turkey and tuna sandwiches just are not cutting it any longer, I don't enjoy just a salad, and I therefore slip up and end up ordering out.

I'm just drawing a blank when it comes to new ideas.

" I am not too clear on how a salad can be boring because I look on salad as a challenge in that I never make the same kind twice.
The items that you can put into a salad are endless! Just think of all the various fruits that can be chopped and added along with different types of lettuces and greens. You can peel kiwi and slice it into the salad. there are all varieties of tomatoes to be sliced and added. Apples and pears and mangos can all be sliced and added. Even a handful of raisins or even chopped pitted dates! I LOVE salads!

You dont have to make the traditional type lunches; instead just take what you enjoy eating. Just open your frig and cupboards and what travels well is perfect! "

Pasta salad and good old PB&J with an exotic nut butter instead of peanut butter are good too. "

" How about pasta or couscous a few days a week? You can put any number of sauces and veggies with them and make a big bowl the night before, then bring it to work and if you have a microwave at work you can heat it up again. Or even different types of bread - try rolls or something occassionally instead of sliced for some variety. I have all these ideas but am still working on doing them myself though! "

" There's also an endless variety of things you can put on sandwiches. I LOVE slices of avocado on sandwiches, as well as sliced bell peppers and cucumbers, and spinach or mesclun mix instead of lettuce. I also really like to use soft goat cheese instead of cheese slices.

I also bring in leftovers for lunch a lot. If you have a microwave at work, you can bring in anything--pasta, a chicken breast and some vegetables, soup, etc. "

" Have you tried frozen entrees? There are some really good ones from Lean Cuisine, Smart Ones and Amy's that have good protein/carb/fat/calorie balance. Just watch the salt content of frozen lunches. Same is true for canned soups. Some are good, but you'll need to be aware of salt content.

What about veggie burgers, frozen turkey burgers, turkey hotdogs or salmon burgers? Shrimp is another good lunch option.

What about breakfast for lunch? Hard boiled eggs or egg salad? Morningstar makes a great sausage patty that is tasty. Sometimes I'll have that and toast for lunch.

Beans are another great lunch option. Black bean salad, chickpeas, edemame salad, etc . . .

I'm also a big fan of using dinner leftovers for lunches. "

" i always make lots of dinner the night before and there's your lunch for the next day, providing you have a microwave. wraps are always yummy too with your salad inside and dressing and any veggies. a thai wrap is my fav: i make some egg noodles and mix with thai dressing, throw in some peppers and mango and chicken if you like. roll it up and enjoy. yummy and different. i also always get my lunch together the night before and just sit it in the fridge cause if i don't i get too tired and lazy in the morning and won't do it. hope this helps "

" For me sandwiches have to be on a hoagie. I hate soggy bread so put the mixings seperate in a bag and put it on the bread later. If you have access to a microwave make enough for dinner that you can put in a plastic container and just heat up. I had a friend when it was summer would leave her lunch on the dash and it would be warm enough by then to eat and she enjoyed sitting outside. Just be careful when doing this to watch food/condiments like maya that may spoil easy.

I like hard boiled eggs with salt and pepper and they last in the shade. "

" This is a delicious salad recipe that you can make the day before and have it for a few days in your lunch. It's healthy and has protein in it as well as the vegs and beans and corns (the chicken is the protein part).
