Suitable for said palette is "Mission in the Kitchen".

This is a cookbook dedicated towards gluten and casein free cooking and baking, helping those with celiac disease, autism, wheat/dairy allergies, as well as offering alternatives for egg and soy allergies.
Like others, I understand the difficulty of learning how to properly (and
deliciously) cook gluten and dairy free. I assume you've felt similar. Often, our options
are not delicious at all - the store bought foods are, for the most part, quite horrid.

(Hence the title: a mission to make all things delicious!)

It also includes a primer on celiac disease, and living a gluten and casein free lifestyle, including common 'hidden' ingredients and steps to having a clean, safe kitchen.


Combined with this, there is a huge emphasis on whole, healthy foods. As someone who is incredibly
nutritionally savvy, this was an important highlight for me.

As a celiac with a casein allergy, I find it difficult (and quite fearful) to eat out of my house.
Having such a disease requires me to be so diligent, and many feel the same way. Often,
people aren't aware that simple things such as using the same jam (someone might have put
a knife with wheat on it in the container) or pans that might have a scratch (gluten can
hide in teflon scratch) is the same to us, technically, injesting poison.
