" I would whip up a rice casserole. Sear about 2 or 3 cups of chopped flavorful veggies -- carrots, quartered Brussels sprouts, frozen peas, sweet pepper -- in a hot pan with a either water or just a few drops of oil. A few sunflower or sesame seeds or some onion powder add a delicious flavor (unless you scorch them, then bleagh). Meanwhile, cook a cup of rice in 2 cups of vegetable broth or bouillion. When that's all done, blend everything together with some mashed tofu, about the same size as 1 or 2 eggs. Sling it all in an 8x8" casserole dish and bake it at 350 degrees for half an hour. "
