I'm in such a rut for dinner ideas lately. I seem to be making the same things over and over again. Tonite I'm making a safe favorite that is easy.
STEWED CHICKEN: 4 chicken breasts 2 cans stewed tomatoes 1 bay leaf 1tbs. dried dill 1 cup baby carrots 1 cup diced celery 1 cup diced green pepper 1 lg. diced onion 3 cloves minced garlic Lightly brown chicken breasts in frying pan. Add onion and garlic. Cover and cook for about 5 mins. Add stewed tomatoes and spices. Cook for 1/2 hour and add veggies. Cook another 1/2 hour or so until veggies are tender. yum! i ate cereal for dinner because of the funk i am in. but i love to cook and have a great recipie i made up. you take jasmine rice and cook it with light coconut milk instead of water. add salt and some olive oil and pepper as per your taste. chop up some cilantro, avocado, cucumbers, papaya or mango, honey roasted cashews and put that on top of the cooked rice on a dish or plate or whatever, even a bowl if just for you. i take chicken breast and slice it into strips and soak it in egg or milk for about a half hour. i use Krusteaz coating mix and sprinkle a generous amount of garlic powder onto it, cause i love garlic, and than i take the chicken and coat it thoroughly in the mix. i have a big frying pan heated up to the proper temp with half olive oil and half butter for the frying. not too much, not too little. i drop the pieces of chicken in the pan and fry until turning white on the other side and than i flip each strip over and drizzle,throughout the pieces, organic maple syrup and cook until done! i have tried other maples but find them too sugary and found the organic, although way too expensive, is simply the best. so than i slice the strips into bite sized pieces and put that on top of the rice as well and complete the dish with sweet red chili sauce. it isn't too hot, but just nice and tangy and sweet and really complements this dish to the max! now i am hungry. bon appetite!

I cannot stand the question 'what's for dinner'. It was such a sore subject for me and so stressful that I've quit cooking the dinner meal except when I get the very rare wild hair to do so.
When I tried so hard to make good dinners and rarely got a 'thank you', 'this is really good', 'wow!'. Mostly I got no response at all. . . I never knew if he liked it. But he never hesitated to tell me if he didn't like something. I heard more of what he didn't like and got so burnt out I just quit cooking. He didn't like that. Too bad. I am not the mama. And I am rambling. . . . thank you for your time.
